Fancy Foods at Christmas

 


Good Monday morning, café friends! I hope your Christmas celebration was filled with blessings!

We had a very nice holiday. Relaxing. Church, food, games, movies. Oh, and cookies. Lots and lots of cookies.

In our family tradition, we usually serve a variety of appetizers on Christmas Eve, followed by a morning brunch and then a big meal on Christmas day. 

This year's appetizers included Crockpot meatballs, cranberry and feta pinwheel sandwiches, holiday flatbread, and a warm pomegranate and spinach dip. Yum!

Brunch was simple. Raspberry candy cane-shaped Danish, spinach and mushroom quiche, and bacon.

For dinner, I wanted something fancy and festive that wouldn't require a ton of work.


I found this recipe for pomegranate glazed salmon with oven roasted brussel sprouts. I love the simplicity of sheet pan dinners, and this one was a hit! So delicious! I served it with a fancy, festive and fruity salad that contained grapes, apples, and cranberries with slivered almonds and a vinaigrette dressing.


This year's dessert was a birch-tree inspired yule log!

Did I mention that I've been watching a lot of the Food channel this holiday season? All of those holiday baking competitions must have inspired me!


This cake was a delicious and simple gingerbread cake with a light and fluffy frosting made from whipping cream, powdered sugar, and spices. And it would've been fine on its own, but I decided to make some birch tree chocolate to go on top. Extra fancy!


We ate this cake while playing Tripoley/Michigan Rummy on the night of Christmas. Good times!

The meal was so delicious and do-able, and it has inspired me to find alternatives for Easter and Thanksgiving that are sheet pan wonders! One pan Thanksgiving dinner? Yes, please!


Am I tired? You bet I am! But in a good way. Monday is here, and we have a week in limbo ahead. A few days of work, a little bit of travel and visiting, and time to get back to normal cooking and cleaning and laundry.
