Pretend Soup (and the real thing, too!)




My step MIL is in the hospital after a bad fall this week. I wish I could do more for her and my father-in-law, but a.) COVID, b.) they are 2 1/2 hours away.

So instead of making chicken soup, I am sending this card.

I think that sentiment is perfect!

I made real chicken noodle soup yesterday, and it really hit the spot. Here's my fast and easy Go To recipe:

Easy Homemade Chicken Noodle Soup

1 medium onion, chopped
2 stalks celery, chopped
carrots, chopped (about 1 cup)
2 cups diced chicken (I used leftover rotisserie chicken)
1 32 oz carton low sodium chicken broth
salt, pepper, dried parsley
Amish homestyle noodles (thin), app. 1 cup dry
water and Better Than Bouillon chicken

SautĂ© veggies in 2 T. olive oil until softened. Add chicken, then broth and seasoning. Cook on low to medium heat for about 30 minutes. Add noodles and cook for another 15-30 minutes. If this gets too thick, add water and bouillon . Enjoy with a nice crusty bread or some saltine crackers. 

When I have more time, I prefer to stew two chicken breasts, with bone, in a big pot of water with some celery, onions, and carrots thrown in. Then I use all of that good broth and chop up the stewed chicken. But this method was fast and still had plenty of flavor.

  1. Cute card! I'm sure your step MIL will feel the hugs and love when she gets it! I love trying other's chicken noodle soup recipes. A couple months ago, I bought a large amount of chicken feet, necks, and backs from a farmer and spent a day making chicken broth. The freezer is deliciously full and tomorrow will be the perfect day to make your soup - thank you!
