So this happened yesterday! A winter storm brought six inches of snow, with another 3- 5 inches expected today. Schools were canceled, businesses closed, and everyone made the smart decision to stay indoors.
It was a good day to sit in a cozy chair and read a good book with a cup of coffee at hand!
I had done all of my errands the day before in preparation. I went to the library, got my books and a few fun BBC shows to watch later. Then I went to the grocery store and stocked up on the food.
And speaking of food, here is last night's yummy dinner!
I decided to make pork chops with mushroom gravy while the guys were out shoveling the driveway and sidewalks. My husband said this one was a winner!
Pork Chops with Mushroom Gravy
4 Center Cut boneless pork chops
1-2 T. olive oil
salt and pepper
2 c. chicken broth
1 T. corn starch
1-2 T. water
1 small can chopped mushroom slices, drained
Preheat oven to 350. Heat olive oil in a pan. Season chops with salt and pepper on both sides, and put in hot pan, cooking each side for three minutes. Transfer chops to baking dish. In same pan, add chicken broth. Mix corn starch and cold water together, then whisk into boiling chicken broth. Add sliced mushrooms, and season with salt and pepper to taste. When gravy has thickened, pour over chops. Place dish in oven and bake, uncovered, for 20-30 minutes.
I served this with mashed cauliflower, but it would also be great with mashed potatoes or wide egg noodles.
A warm, comforting meal on a cold, snowy day.
Another snow day for Sam. I think we will play some backgammon today!

I'm wishing for a cozy, snowy day just like you have. It's cold here, in the 30s, but dry. We haven't had snow since Christmas. Enjoy it while it lasts!
