Black Bean Chili

 


It's no secret that I love chili in all its various forms. 

I usually fix a chili that packs some heat. But sometimes, I like a chili that is on the sweet and savory side. This one is just that.


Black Bean Chili

1 lb. ground beef

1 chopped onion

2 cloves garlic, minced

1-2 T. olive oil

1 c. chopped celery

1 c. chopped carrots

1/4 c. brown sugar

2-3 T. ketchup

2-3T. Worcestershire sauce

1 can diced chili ready tomatoes

2 cans black beans (reduced sodium), rinsed and drained

1 carton reduced sodium beef broth

chili powder, to taste

salt and pepper to taste


In skillet, brown ground beef, and add onions and garlic and cook until tender. Add brown sugar, ketchup and sauce. Set aside. In stock pot, add olive oil, celery, carrots and cook until tender. Add meat mixture to vegetable mixture. Add beef broth, tomatoes, black beans, and seasoning. Simmer for 30 min.-one hour, until desired thickness. Serve with bread or rolls and enjoy!
