Chickpea Orzo Spinach Salad

 


It is May 2nd, and I am still wearing a parka and hat and gloves.

It could be worse. Up north, they are still getting inches of snow. INCHES.

You can't rush the seasons. They will arrive precisely when they mean to. (That's a Gandalf reference for you Hobbit fans.)

Sometimes, you just have to be content in the present.

I made a delicious salad for dinner yesterday by rummaging through the pantry and fridge. 

Chickpea Orzo Spinach Salad

1 c. orzo

1/4 c. chopped onion

1 Can Garbanzo Beans/Chickpeas, rinsed and drained

3-4 c. baby spinach

1/2 c. grape tomatoes, sliced

1/2 c. chopped cucumber (I like baby cukes)

6-8 Kalamata olives, sliced in half

3-4 T. Garlic Expressions dressing

Freshly grated parmesan cheese

Cook orzo according to directions. While it boils, add chopped onion to soften. When pasta is cooked, drain and set aside to cool. When cool, add dressing to pasta and toss. In a separate bowl, toss all other ingredients together (except cheese). Add cooled orzo mixture to salad ingredients. Top with freshly grated parmesan and freshly grated black pepper. Enjoy!

  1. Yum....my kind of dinner. We have a farmers' market just a 2 mile bike ride from our home and this is exactly the kind of thing I love making for dinner when it opens! Thanks for the recipe, Mary Rose.
