Have you ever had chia pudding? It is really delicious and very good for you! Chia seeds are rich in Omega 3 fatty acids, and are high in fiber. I decided to make this for Sunday brunch with my mom and sisters last weekend.
This recipe makes four servings, and can be stored in the fridge for a few days.
Blueberry Almond Chia Pudding
1 cup plain Greek yogurt
1 cup unsweetened vanilla almond milk
1/2 c. chia seeds
4 teaspoons sweetener of choice (pure maple syrup or honey work great)
2 t. vanilla extract
1/2 c. blueberries, fresh or frozen
toppings: sliced almonds, unsweetened coconut flakes
In a bowl, whisk together yogurt, almond milk, chia seeds, sweetener and vanilla extract. Stir in blueberries. Pour the mix into four Mason jars with lids. Store in fridge overnight. To serve, top with sliced almonds and sprinkle with coconut flakes. Enjoy!
You can eat it right out of the jar (which we did at brunch), or you can put it in a bowl. I plan on trying this basic recipe with other items...raspberries, chocolate chips, apples and walnuts. Lots of combinations to explore!

I've never had chia seeds as a breakfast meal, only as a sprinkling on top of yogurt. A friend at the YMCA said this is her favorite breakfast and now you've said how good it is, so I'll have to try it. Thanks for another "looks good" recipe!
