Mediterranean-Style Side Dishes (perfect for your next grilling night!)
It all started with the wine.
Last month, our local Busch's grocery store had samples of a wine from Sonoma Valley...Acacia Pinot Noir. And it was delicious. The wine rep said it would pair well with a red meat, like lamb chops, and of course, it was on sale.
I took it home, saving it for a special dinner.
Tonight was that special dinner.
We don't eat red meat that often...maybe once or twice a month. But when we do, I want it to be amazing.
I decided to make a Mediterranean-style dinner tonight, complete with wine and some side dishes. I thought I'd share some of these fast and easy recipes with you today!
Tri-color oven roasted new potatoes. So amazing! Here's how I fix them. In a shallow roasting pan, put two or three tablespoons of olive oil, and place it in a 400 degree oven for 2 or 3 minutes, then pull the pan out. Next, place potatoes, cut side down, in the hot oil. Season with sea salt, fresh ground pepper, and about a tablespoon of rosemary. After ten minutes, pull the pan out, toss the potatoes in the pan to coat in seasonings, and cook for another ten or fifteen minutes, until tender.
Did you know that you can grill pita? And it is so delicious, too! Baste each side with olive oil, place on the grill for a few minutes on each side, and then serve warm with hummus. Oh my word, is this good!
Finally, stewed tomatoes with fresh green beans!
This traditional dish is often served at Greek restaurants. I put a big pot of water to boil, then added about a pound of clean, cut fresh green beans. Cook for about ten minutes until tender, then drain the pot. To the beans, add two can of stewed tomatoes, and bring to a boil. Top this mixture with fresh feta and serve.
