National Coffee Day


Can you believe it? I missed National Coffee Day yesterday!

I have a good excuse. We were attending an autumn family reunion, and I got busy baking and prepping beforehand. That is not to say that I did not drink my fair share of coffee yesterday. I did! And I even brought Pumpkin Spice coffee with Pumpkin Spice creamer to share with family.


So let me tell you about my conversation with one of my brothers that went something like this:

Me: Tim, would you like some coffee?

Tim: I gave up coffee. I really don't even miss it.

Me, with skeptical expression: Okay. How about a cookie instead?

Tim: No, I don't eat sugar and carbs anymore either.

Me: Seriously, Tim, what do you have to live for?! Why even get up in the morning, only to wake to  a world where there is no coffee and no cookies?!

I was only slightly exaggerating.


And speaking of cookies, this one was so awesome! Tim does not know what he was missing! It tastes a bit like Sea Salt and caramel, and the recipe came from the back of these Ghirardelli caramel chips that I picked up at Walmart. I've had a bit of a sweet tooth lately, which is dangerous for me! That's why it is best to save my baking for those times when I can share a lot of it with others.
