I checked my garden last week, and couldn't believe how many peppers I had that were ready for picking! I think I must have bought some mature plants this year.
I knew exactly what to do with this bountiful harvest. Pickle them!
I had this pot of yumminess on the stove, making my whole house smell. I dared Sam to put his face over that pot, and when he did, he jumped back and said " Ugh! I could feel that all the way to my toes!"
LOL! That's when you know you've got a good batch...when you can feel it in your toes!
I've also been harvesting from my lettuce an spinach bowls.
I used the greens to make a great side dish for dinner. I topped them with this Fiesta Quinoa from Aldi, and served it with Aldi Cilantro Lime chicken. Mmm!

Winter is my favorite season but, oh my, nothing beats summer produce! Easy, delicious meals that require almost zero preparation AND that are so, so nourishing to one's body and soul....I thank God every day for the gift of summer produce! And yours look yummy, by the way.
