Chop Chop Salad

 


A few months back, I visited a local restaurant with my Mom and husband. Sidelines Eatery in Lambertville, Michigan is famous for their ribs. But on this trip, I decided to try the Chop Chop Salad. It was SO good that I wrote down everything in it so that I could re-create it at home!



If you are like me, you get bored with the same old tomato/lettuce/cucumber combination. It's nice to shake it up a little!

This salad combines sweet and savory for an awesome dish!


Chop Chop Salad

Romaine lettuce, chopped
Grilled chicken, diced
Bacon, cooked and crumbled
1/2 c. dried cranberries
One large cucumber, chopped
1 1/2-2c. pineapple, chopped
Top with:
Feta cheese
Sunflower Seeds
Poppyseed Dressing

  1. Yum!! Salads are my favorite meal! The Pioneer Woman had a fantastic salad in her summer issue...grilled chicken rubbed with a homemade seasoning mix over a bed of mixed greens, blue cheese, homemade croutons, and blackberries, raspberries, and blueberries. The dressing was homemade with mashed raspberries, honey, and vinegar. It was SO GOOD! I'm going to give your salad a try. Thanks for the recipe.

  2. Oh, yum! I go veggie with chickpeas or maybe grilled salmon or tuna instead of the chicken. This is one of my favorite meals to serve spring through fall.
