Fatoosh! Another Great Salad

 


Do you fatoosh?

Sorry, that's a nerdy joke. If you've ever seen Marvel's Captain America, Steve Rogers asks Peggy Carter "Do you fondue?" It makes me laugh because he has no clue what fondue really is.

Fatoosh? Well, if you've never had it, you should give it a try!

Fatoosh is a middle eastern salad that uses a few key ingredients to give it pizzazz. The dressing includes lots of fresh lemon juice, olive oil, and sumac. Sumac is a spice common in middle eastern cooking. It is usually found in specialty grocery stores. Lucky for me, my local store carries it!

This recipe comes from the Beirut, which is a well known restaurant in Toledo, Ohio. It is a great way to use up a lot of garden herbs and produce!


Beirut Restaurant Fatoosh Salad

Romaine lettuce, chopped
Tomatoes, chopped (Romas work great, but I had a lot of littles, so I used those)
Cucumber, chopped
Green Pepper, chopped
small onion, chopped ( I used Vidalia)
2 green onions, chopped (didn't have this last night, but it was fine without)
Fresh Parsley, chopped
Fresh mint, chopped

Dressing:
1/4 c. fresh lemon juice
1/4 c. olive oil
2 T. sumac
garlic salt and pepper to taste

Topping:
Feta cheese
Toasted pita chips

Toss vegetables and herbs together. In a 400 degree oven, place torn pita on a cookie sheet, drizzle with olive oil, and bake until crispy. Let cool. Mix dressing and toss over salad. Top salad with pita chips and feta cheese.
