The Rising Cost of...Watermelon?

 


It seems like the price of everything is skyrocketing.

I am not typically a big watermelon eater. I can take it or leave it. That's probably why I consider it a summertime, once a year treat.

I had the idea to make a nice, fresh watermelon salad yesterday. The guys are still out of town, and I am eating light.

I picked up a small container of precut and cubed watermelon, and I almost put it in my shopping cart before looking at the price. Over $10!

I was shocked!  I asked the woman next to me "Does this look like a $10 item to you?"

She shook her head and answered "That is so sad."


So instead, I bought a pack of four watermelon slices, which was still outrageously expensive at $4!

So here it is.

I think I shall call this one "Millionaire's Salad".

1-2 cups baby spinach
1 baby cucumber, sliced
1 sliced watermelon, cubed
Fresh mint, chopped
1-2 T. feta
1 T. olive oil
1/2 T. balsamic vinegar
fresh sea salt

Basically, I layered everything above. In a small bowl, I whisked together the olive oil, balsamic vinegar and salt, then drizzled it over the top. It was delicious and refreshing!

I guess this one will be a "special occasion" salad.

In the meantime, I thought it might be cheaper to stitch my watermelon rather than eat it.

  1. $10 for a small container of cubed watermelon?!? You were smart to pass that up! I understand paying a premium for convenience but that's unreasonable. The salad looks delicious - never thought to pair spinach and watermelon. Our farmer's market is fantastic, so I skip the store in the summer and fall. Whole watermelons sell for $4-$5 and taste amazing! Same for the cantaloupes. I'm eager for both to show up on the vendors' tables!
