Pineapple Chicken

 


Here's a super easy mid-week supper that uses just a few ingredients but packs in big flavor!

Here's the ingredients list:

1 pkg. frozen riced cauliflower
1 pkg. Gilbert's Aloha Sausages
1 can pineapple chunks
1 jar pineapple salsa
chopped green onions


Cook riced cauliflower in the microwave, according to directions. While that steams, slice Gilbert's Aloha chicken sausages and sauté in a pan with one or two tablespoons of olive oil. When this is nicely browned, add a small drained can of chopped pineapple chunks. Then add a jar of pineapple salsa.

Add cauliflower to a bowl, top with chicken sausage and salsa mixture, and add chopped green onions to the top.


This was a really good low carb, high protein meal.
