A Big Haul

 


Produce is coming in fast now! When I saw all the options last week, I got a little excited...and ordered way too much! Now, I'm sneaking veggies into everything I make! 


This is a super simple meal that always makes me think of summer. The first time I had this dinner was at my In-Laws house over 25 years ago. Shirley Ann made this one, but used ham hocks in her recipe. And it was delicious!

I make my version a little healthier.

Summer Boil Supper

1 pkg (2 links) Butterball Turkey Smoked Sausage, sliced

1 carton (32 oz) reduced sodium chicken or vegetable broth

Fresh green beans, trimmed

Red skin potatoes

seasoning to taste

In a Dutch oven or large pot, add sliced smoked sausage to a few tablespoons olive oil, and sauté for just a few minutes. Then add broth, beans and potatoes. Make sure broth covers everything. If it does not, add some water or more broth. Season to taste with fresh ground pepper. Let everything come to a boil and simmer for about 30 minutes, stirring occasionally, until potatoes and beans are soft. Scoop all that yummy goodness into a shallow bowl and enjoy! Pair this one with a hearty bread or cornbread muffins. So good!
