Simple Summer Salad

 


Oh say does that star spangled banner yet wave...

Happy Independence Day! Do you have plans for the 4th of July? My plans are typical...we give Jemma lots of calming chews around 9pm, wait for the first bangs, and then head down to the basement to wait out the fireworks in a closed closet. Good times!


Looking for an easy summer salad to take to a cookout? This one is a classic.


Thinly sliced cucumbers, sliced tomatoes, sliced red onion, one can of rinsed and drained chickpeas, freshly chopped parsley, and about 1/3 to 1/2 cup of Garlic Expressions dressing. Let it all marinate for a few hours if possible, then serve. I like to top mine with some feta cheese.


So good, and so refreshing!

  1. Oooh, another delicious-looking recipe! I've been away for 2 weeks and it would be a wonderful thing if the tomatoes and cucumbers came into season while I was gone and are at the farmers market! Our dog does the same thing during fireworks but absolutely nothing calms her so we just ride it out. I do love fireworks, though, and love seeing them!
    We took a long bike ride for our Fourth of July celebrations (we set a goal to go one mile farther than our farthest trip to date) and now we are going to my parents' home for a cookout. Enjoy your Fourth!
