Lemon Poppy Seed Cookies (easy style!)

 


Sometimes, a girl just needs a cookie. And on Mother's Day, I had a real craving for something sweet.

I wanted to make cookies, but I had exactly one egg and no vanilla extract.

Hmmm. What to do?



I rummaged around in the pantry and found a Pillsbury Lemon Poppy Seed bread mix. I decided to try to turn this one into a cookie. And guess what? It turned out great!

Here's the recipe:

One Pillsbury Lemon Poppy Seed Bread mix
One Egg
Two-thirds cup melted butter
Powdered sugar

Preheat oven to 350 degrees. In a bowl, combine mix, butter and egg until well blended. Refrigerate for 15-30 minutes. Roll dough into one inch balls (about one Tablespoon). Place on ungreased cookie sheet and slightly press down to shape. Bake for 12-13 minutes. Let cool on cookie sheet for two minutes, then transfer to a rack. Once cooled, sprinkle with powdered sugar. Enjoy!


This would also be a good cookie with a powdered sugar glaze (easy to make, mix a few tablespoons powdered sugar with lemon juice or milk until creamy, then drizzle).

I like lemony dishes in the springtime. This cookie has just enough sweet and tart, perfect with an afternoon cup of coffee.

  1. Looks so good and lemon is so refreshing! Lemon Poppy Seed bread mix goes on my list. I use Trader Joe's brownie box to make chocolate cookies with crushed peppermint candies for decoration.
