In honor of Queen Elizabeth's funeral today, I decided that Mom and I need to have a special lunch.
I made Coronation Chicken Salad, a recipe I found on Pinterest. Delicious! The curry powder and apricot preserves give such a distinct flavor!
I also made cinnamon scones that were ah-mazing!
We've always been anglophiles. My parents were newlyweds when the Air Force sent them to live in Cambridge, England. They were living there when Queen Elizabeth was coronated. Can you imagine? Over 70 years! That's a lot of history!

It was nice reminiscing with Mom today.
England, no doubt, is feeling the loss of their "mum" today. God bless the queen! She served her country faithfully.
