Last month, the guys took us to a restaurant in Indianapolis called Piada Italian Street Food. It's a chain restaurant, but I'd never been to one. I would call it the Italian version of Chipotle. It was so good. I had a power grain salad bowl that was amazing.
I was hungry for that bowl yesterday, so I made my own version, plate-style. And here it is!
Power Plate
Baby spinach
1/4-1/2 c. cooked farro
steamed sweet potatoes, diced (about 1/2 c.)
steamed Brussel sprouts (1 c)
1 T. Garlic Expressions dressing
2 T. Lemon hummus
2 T. pepitas
Full of fiber and protein. So good for you!
I'm signed up for a 28 day challenge with Dr. Mary Clare Havers of the Galveston Diet. Five simple, achievable goals that are:
1. 25 grams or more of fiber each day
2. Less than 25 grams of added sugar each day
3. No alcohol
4. 30 minutes of exercise in your target heart rate
5. Stress management and good sleep
Simple things to help me develop good habits in the new year.
And speaking of good habits, I'm just finishing up Atomic Habits by James Clear. It's got some helpful tips on ways to go about breaking bad habits and how to introduce good ones. For example, couple a new habit with an old one. Example: when I make my coffee in the morning, I will read my Bible. Create an environment that will make your new habit easier to follow.
This week, I unsubscribed from all of the stamp company blogs and emails. If I don't see the "new thing", I won't be that tempted by it. This will help in my Year of Plenty.
I have some good habits I want to introduce, like lifting weights, reading, practicing my dulcimer. And I have some bad habits I want to eliminate, like leaving the TV on when I'm not watching it (tired of the reruns), internet scrolling, paper piling.
Healthy habits for a healthy year!
