Last year, I tried this chicken parmesan from Aldi, and it was so delicious! I pan fried it, then put it in the oven topped with marinara and mozzarella, serving it on top of pasta. So good!
After we enjoyed it, I thought "You know, that would be a great meal to serve for Christmas dinner!"
I went back to Aldi the next week. GONE.
Well, I went to Aldi this week, and guess what I found! Yay! I bought several boxes and put them in the freezer.
I also highly recommend this special Priano bronze-cut pasta. Sauce clings to it nicely.
Am I crazy for thinking about holiday meals that are two months away? Maybe. But I know how these things sneak up on me and stress me out. I now have a plan. I feel good.
And speaking of thinking ahead, how about a few more of those Christmas cards?

My daughters have made me a fan of Aldi! I've never tried their prepared foods, though. Next time I'm there, this chicken parmesan will be on my radar. It's a dish I would never make from scratch so I'm totally willing to buy it already done for me. I agree with you about the bronze-cut pasta, too. It tastes better and I'm not even a pasta-eater!
